Meatless Monday – Baked Potatoes with Feta and Dill

Don’t you just love comfort food?  I do, especially when the weather is chilly and rainy like today.  For this Meatless Monday, I decided to share one of my favorite recipes for my husband and I when we eat dinner later after the kids have gone to bed.  We call it an “at home” date night.  Anything with potatoes or cheese, or in this case, both, is such a winning dinner for me.  Okay, so here are the ingredients:

About 6 medium to large potatoes(similar in size-I use Carolas)

One package of Feta Goat Cheese(I use Valbreso from France)

One bunch of fresh dill (chopped) I love dill and use the entire bunch

You will also need about 1/4 cup of olive oil for the baking pan along with sea salt and pepper, plus an additional 1/4 cup of olive oil that goes into the final dish.
  • First, preheat the oven to 450 degrees, get out a decent sized roasting pan and drizzle the bottom with olive oil and salt and pepper. 
  • Wash and scrub the potatoes, give them a few pokes with a fork, and roll them around in the pan with olive oil, salt, and pepper. 
  • Place in the oven.  After about 30 minutes minutes I turn them to get a little “crispness” on each side of the potato.
  • While the potatoes are cooking, get out a large bowl!  Crumble the feta cheese, chop the dill, and place them into the bowl.
  • Once the potatoes are done(about an hour total), take them out and let them sit for a minute – they’ll be hot!  Next, work quickly and carefully to remove the potatoes from the skins and put them into the bowl of feta and dill.  Set the skins aside in a separate bowl.
  • Add the other 1/4 cup of olive oil and mash everything together.
  • Next, scoop the mashed mixture into your potato skins(oh, you better do this step…..the skins are super yummy and GOOD for you!), serve them up in a bowl and ENJOY!
