My Favorite Popcorn Recipe

My absolute favorite snack is popcorn.  I love the crunch, the fact that I can eat a whole bowl and not feel guilty, and mostly, I love how inexpensive it is to buy.  I get my organic yellow popcorn in the bulk bin at my local grocery store and usually you just can’t beat the price when buying from the bulk bins.  As a matter of fact, most of the ingredients in this recipe are scooped from the bulk bins. 
Here’s what you need:
  • About 2 tablespoons oil (I use olive oil because it adds a nice flavor to the finished popped corn) *Another fun oil to use is coconut oil – good for you and yummy, too! (Canola is okay, too.)
  • 1/3 cup popcorn kernels ( I prefer yellow organic, white is good too)
  • about 1 tablespoon nutritional yeast (depending on your taste, you may want more or less)
  • about 1 teaspoon dill weed (again, depending on your taste, more or less)
  • sea salt

All of the ingredients above (except the olive oil) are purchased from the bulk bins at my grocery store or my local health food store. 

Here’s what I do (I have a fun “dome” popcorn popper, but this could also be done in a pot on the stove just as easily):

  1. Turn the burner on medium-high heat and pour in the oil. 
  2. Add one kernel and, when it pops, add the rest of the kernels.
  3. Cover and carefully move/shake the pan back and forth until the popping stops.
  4. Remove pot from the stove and pour your popped corn into a large bowl.
  5. Sprinkle with nutritional yeast, dill weed, and sea salt. Enjoy!

I am telling  you, once you try this, you won’t want to eat popcorn any other way ever again.  It is super yummy and the nutritional yeast adds a nutty and cheesy flavor with a little health kick for an added bonus!
