Wow! It’s Monday again already and that means I like to promote a meatless one for everyone. You may already know that I am a vegetarian so every day is meatless for me, but I understand that not everyone can live without their meat. My hope is that at least this one day a week, you can all give it a try. Think about the money you can save on having to buy less meat each week if you go meatless on Mondays? Also, it really is more healthy to include more whole foods in your diet. Some staples in my home are brown rice(if you follow my tips, if tastes yummy!), quinoa(a super-grain), pastas, and even potatoes. From there, I love to add loads of veggies, sometimes beans, and often cheese. My kids love cheese so I include it in many meals, whether it’s shredded cheddar or parmesan, it’s there for several meals a week.
Tonight, I am teaching an adult ed class so dinner will be at a friend’s house so I will get the kids each a healthy vegetarian sub sandwich to make things easy for myself and the person caring for them. Plus, they love subs since they get them often. Now, hubby and I won’t eat until after we get home from the class(I know, it will be kind of late, but again, something we don’t do often.). Our dinner is an absolute favorite and I am going to finally share the recipe with you all here(hopefully tomorrow because I want to include pictures from the prep tonight). It will include the yumminess of baked potatoes, goat cheese, and fresh dill. Oh, I am already looking forward to it!

Our family doesn't eat that much meat–if anything usually chicken. But I love making cheese/veggie quesadillas and my kids love them too!
