As you may know, I am a huge supporter of Meatless Monday and have often promoted it on Twitter and often write and share recipes here on my blog on Mondays. I don’t have a recipe to share today, but I am happy to share a small victory within the school district that my kids attend. Meatless Mondays have been added to the school lunch menus, even including one meal prepared with Maine potatoes, as in, local potatoes. Although they are smothered with “cheese sauce” which I’m pretty sure isn’t real cheese, but we will hope to improve that in the near future. And they aren’t calling it Meatless Monday, but the choices for students are meals that don’t include meat so, yeah, it’s pretty much Meatless Monday. It’s a good start toward many positive healthy changes in the upcoming months. It’s a really good start.
