My husband loves meat. It is what it is and that’s okay, but I am the shopper and don’t buy much meat at all, which means it’s pretty much Meatless Monday most days in our home. My younger son and I are vegetarians and my older son is mostly vegetarian, but my husband would still eat meat every day. If I would only cook it for him. Don’t feel bad for him. He is healthy and not withering away before my eyes and really does like the meals I prepare, but I also try to be aware of the fact that I need to up the ante on flavor and seasoning of my vegetarian dishes to he can still feel satisfied. His eyes aren’t exactly rolling back into his head (some sort of sign of OMG-delicious), but he is eating seconds, and leftovers, so I guess I’m doing something right. OR he’s at the point that he realizes he just better eat what I make or he might, gasp, go hungry. Do you have something like my husband in your family? Remember, just committing once a week to a vegetarian meal, like on Meatless Monday, will improve your health, have less impact on the planet, and broaden your recipe collection. It might also cause the meat-lovers in your family to complain a little. I suggest telling them they can have whatever they want if they’re willing to prepare it and watch how quickly they’re suddenly *okay* with eating a vegetarian meal every now and then. So funny how that works.
