Dark Chocolate Peppermint Bark

Yesterday I mentioned how I baked way too many Christmas cookies this past weekend, but that my overachieving in the kitchen had a happy ending when I was able to donate a box of goodies to my local soup kitchen. Their show of gratitude still makes me smile so much that I think I’ll have to do it again next year.

Along with the oodles of cookies I baked over the weekend I also decided to make Dark Chocolate Peppermint Bark for the very first time. It is something I have always enjoyed, but never took the time to make myself. It turned out to be one of the easiest holiday treats I have ever prepared and the one that puts me in the holiday spirit the most…..with every little crunchy bite of dark chocolate peppermint goodness. If you are looking for a last-minute holiday treat to give away to friends or family or just keep for yourself to nibble on while wrapping presents, this is the one that will not add any stress to this busy time of year because it is so easy to make!

Here is what you need:

  • 2 cups of dark chocolate chips
  • About 5-6 candy canes (more or less depending on your taste)
  • 1 large cookie sheet
  • Waxed paper

Here is what you need to do:

  1. Start by lining the cookie sheet with a large sheet of the waxed paper and set it aside.
  2. Place the candy canes in a resealable plastic bag and use a rolling pin to crush them up into little pieces. (Set aside about 1/4 cup of the crushed pieces.)
  3. Dump the chocolate chips into a medium sized bowl that is microwave-safe and heat it for 1 minute. If you prefer to melt the chocolate on the stove, you can do that, but I just find this method much easier.
  4. After 1 minute, stir the chocolate chips and keep heating in 15-second increments, stirring after each cycle. Keep doing this until the chocolate is completely melted.
  5. Stir the crushed candy canes into the melted chocolate and immediately pour and spread evenly on the wax paper-lined cookie sheet. Sprinkle the reserved 1/4 cup of crushed candy pieces over the top of the chocolate and tap the pan gently on the counter to help it set a little.
  6. Put the pan in the refrigerator and allow the bark to harden. (at least 30 minutes)
  7. Store in an airtight container in a cool, dry area of your kitchen.

    I make this a lot with white chocolate, but never with dark..looks delish!

    • One of my favorite things about chocolate bark is that you can pretty much make it however you want and it’s always a treat that everyone loves!

    • Yes! That’s one of the things that makes this such a great recipe. It’s super easy so the kids can help, too. They would probably LOVE smashing up the candy canes.
